All meats and seafood procured from farmers and fishermen that are environmental conscience and harvest from sustainable practices and species.

DESERTS

Incorporating Healthy flours i.e. Banana and almond) and substituting super foods like Heirloom Cacao, and healthy sugar alternatives( D Ribose)for typical desert ingredients SEIDERHOUSE is able to create super healthy gluten free deserts with while maintaining that deliciousness and emotionally satisfying sweet tooth craving. Paleo, Gluten and diabetic friendly.

NATURAL/ BIODYNAMIC WINE

Incorporating Health flour and typical desert ingredients SEIDERHOUSE is able to create super healthy gluten free deserts with out sacrificing flavor.

Most important, naturally made wines taste better. They have more subtle and complex aromas. They are usually lower in alcohol and lighter in body but have more precise and true fruit characteristics, complemented by flavors derived from the soil and subsoil. Natural wines have better acidity, even in abnormally hot or dry years, and possess a longer and more complex finish that stimulates the palate rather than dulls it. Consequently, they tend to complement food in a much more pleasing way, which is, of course, one of the most important roles of wine. Additionally,

Grapes are harvested by hand, bringing mature, clean fruit to the winery, and yield (grapes per acre) is controlled by pruning (limiting the number of buds per plant) and by retaining lower-yielding old vines.

Fermentation occurs using only indigenous yeasts naturally present in the vineyard and cellar, allowing the true flavors of the grapes and the mineral qualities of the soil to be expressed. (Of course "stuck" fermentations or vintages with high levels of rot may require added yeasts)

Sulfur Dioxide is not used or is limited to as small a dose as possible.  Wine-making without SO2 is difficult, and requires, in the opinion of most natural wine-makers, grapes grown organically in vineyards with healthy wild yeast populations, as well as experience and careful work in the cellar. While the results can be uneven and marked by reduction or "off" aromas, low-sulfur wines can also offer beautifully complex and pure aromatics and lovely flavors with more "terroir" character.
